Apple Cider Glazed Roasted Carrots

A simple yet delicious dish featuring roasted carrots glazed with apple cider, maple syrup, and spices, perfect for gatherings or cozy meals at home.

  • 6 large carrots, peeled and chopped
  • 1/2 cup unfiltered apple cider
  • 1 Tbsp pure maple syrup
  • 1 tsp ground cinnamon
  • 1 tsp dried rosemary
  • 2 1/2 Tbsp avocado oil
  • 1/4 tsp sea salt (to taste)
  • 1/4 cup raw pumpkin seeds

Instructions

  1. Pour the apple cider into a small saucepan with maple syrup, ground cinnamon, and dried rosemary. Heat to medium-high and bring to a boil.
  2. Boil and whisk occasionally until reduced to about ⅔ of its original volume, about 5-8 minutes.
  3. Whisk in the avocado oil and sea salt after the cider has reduced.
  4. Preheat the oven to 400°F (200°C).
  5. Spread chopped carrots on a large baking sheet.
  6. Pour the glaze mixture over the carrots and toss to coat.
  7. Bake for 15 minutes, stir, then bake an additional 10-15 minutes until golden brown and cooked through.
  8. Add pumpkin seeds 3-5 minutes before the carrots finish roasting.
  9. Serve and enjoy alongside your favorite meals.

Notes

These carrots can be served warm or at room temperature and make great leftovers. Store in an airtight container for up to 3 days.
