Baked Sausages with Apples Sheet Pan Dinner

A simple yet delightful sheet pan dinner combining savory sausages and sweet apples with tender vegetables.

Ingredients

  • 2 large apples, cored and cut into cubes
  • 1 1/2 pounds fingerling potatoes
  • 1/2 pound baby carrots
  • 1 large red onion, cut into wedges
  • 2 tablespoons fresh sage, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons honey
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon pepper, or to taste
  • 4 links pork sausages

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the apple cubes, fingerling potatoes, baby carrots, and onion wedges.
  3. Add the chopped sage and rosemary to the bowl.
  4. Drizzle the honey and olive oil over the veggies and apples.
  5. Season generously with salt and pepper.
  6. Toss everything really well to coat the ingredients evenly.
  7. Arrange the veggies and apples in a large shallow roasting pan.
  8. Place the sausages in and around the vegetables.
  9. Bake for 30 minutes or until the sausages are golden and cooked through.
