Mrs. Myers’ Banana Bread

A beloved banana bread recipe that is simple to make and delightfully sweet, perfect for breakfast or as a snack.

  • 2 cups (424 g) sugar
  • 1 cup (226 g) butter, softened
  • 3 cups (384 g) all-purpose flour
  • 1 tsp baking soda
  • 1 tsp table salt or 1.5 tsp kosher salt
  • 4 to 5 eggs
  • 2 tsp vanilla extract
  • 1 cup nuts, optional
  • 1/2 cup buttermilk
  • 1 quart mashed bananas (about 6 to 8 ripe to overripe)

Instructions

  1. Preheat the oven to 350°F. Butter two 8.5 x 4.5-inch loaf pans generously.
  2. In a stand mixer, cream the butter and sugar together until light and fluffy.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. With the mixer on low, add the eggs one at a time and beat well after each addition.
  5. Add the vanilla, buttermilk, and mashed bananas to the mixture and mix until well incorporated.
  6. Add the flour mixture in two additions, mixing until just combined.
  7. Divide the batter evenly between the two prepared loaf pans.
  8. Bake for approximately 1 hour or until a toothpick inserted in the center comes out clean.
  9. Remove the loaves from the oven and turn them out onto a cooling rack. Let cool before slicing.

Notes

This banana bread is versatile and can be served plain, with butter, or as a sandwich base. Try adding chocolate chips or nuts for variations.
