  • 1/4 cup melted butter
  • 2 tablespoons sugar
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 ripe bananas, mashed
  • 1 cup strawberries, sliced
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press this mixture into the bottom of a springform pan to make the crust.
  3. In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy.
  4. Add the eggs one at a time to the cream cheese mixture, mixing well after each addition.
  5. Stir in the mashed bananas, then gently fold in the sliced strawberries.
  6. Pour the cheesecake mixture over the crust in the springform pan, spreading it evenly.
  7. Bake the cheesecake for 50-60 minutes, or until the center is set but slightly jiggly.
  8. Let the cheesecake cool at room temperature, then chill in the refrigerator for at least 4 hours before serving.
  9. Before serving, whip the heavy cream until soft peaks form and spread it over the cooled cheesecake.
