Banana Walnut Cream Cake

A delightful dessert mixing ripe bananas and walnuts, perfect for any occasion.

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 4 ripe bananas, mashed
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup walnuts, chopped
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cake pan, optionally lining it with parchment paper.
  2. In a bowl, mix the flour, baking soda, and salt, then set aside.
  3. In another bowl, cream together the softened butter, sugar, and brown sugar until light and fluffy.
  4. Beat in the mashed bananas, eggs, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the banana mixture, alternating with the sour cream, mixing until just combined.
  6. Fold in the chopped walnuts gently using a spatula.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve with whipped cream or vanilla ice cream for an extra treat. Can be stored at room temperature for up to 3 days.
