Ingredients

Scale
  • to 2 lbs boneless skinless chicken thighs or breasts, cubed
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp black pepper
  • ½ tsp cayenne pepper (optional)
  • ½ tsp salt
  • 2 tbsp hot honey (optional)
  • 1 cup mayonnaise or Greek yogurt
  • ⅔ cup Thai sweet chili sauce
  • ¼ cup Sriracha (adjust to taste)
  • 2 tbsp fresh lime juice
  • Wooden or metal skewers

Instructions

  1. In a large bowl, toss chicken with oil, garlic powder, paprika, pepper, cayenne, salt, and hot honey if using. Marinate for 10–15 minutes.
  2. In another bowl, mix mayo, sweet chili sauce, Sriracha, and lime juice. Adjust to taste. Reserve half for basting, the rest for dipping.
  3. Thread chicken onto skewers, spacing pieces slightly apart for even cooking.
  4. Grill: Preheat to medium-high. Grill 15–20 mins, turning and basting until chicken is cooked and caramelized.
  5. Air Fryer: Preheat to 400°F. Cook 10–12 mins, flipping and basting halfway.
  6. Oven: Preheat to 425°F. Bake 20–25 mins, turning and basting. Broil last 2–3 mins for caramelized finish.
  7. Serve hot with remaining sauce, a drizzle of hot honey, and garnish with cilantro, green onions, or sesame seeds.

Notes

Marinate chicken up to 24 hours ahead. Sauce keeps 3 days refrigerated. Great with rice, slaw, noodles, or corn. Use yogurt for a lighter sauce or skip Sriracha for a milder flavor.
