Best Ever Healthy Pumpkin Pie

A healthier choice for pumpkin pie lovers using pure maple syrup and coconut sugar for sweetening, perfect for fall and holiday gatherings.

  • 1 (15 ounce) can pumpkin puree
  • 3 eggs
  • 1/4 cup pure maple syrup
  • 1/4 cup coconut sugar or organic cane sugar
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon allspice
  • 1/4 teaspoon salt

Instructions

  1. Make the pie crust as directed.
  2. Preheat the oven to 350 degrees F.
  3. In a large bowl, combine pumpkin puree, eggs, pure maple syrup, coconut sugar, almond milk, vanilla, cinnamon, nutmeg, ground ginger, allspice, and salt. Mix until smooth.
  4. Pour the filling into the pie pan.
  5. Bake for 50-60 minutes until the filling is set, ensuring to check every 20 minutes to avoid burning the crust. Cover the edges with foil if they brown too quickly.
  6. Allow the pie to cool for at least an hour before serving. Store in the fridge after cooling. Top with whipped cream or ice cream before serving.

Notes

For a richer flavor, use coconut milk instead of almond milk. Can be made ahead of time and stored in the refrigerator or frozen for later enjoyment.
