Best Homemade Hamburger Patty Recipe

Nothing beats a juicy homemade hamburger patty fresh off the grill! Whether you love a thick, steakhouse-style burger or a thin, crispy diner-style patty, this easy recipe guarantees perfect results every time.

Ingredients

Scale
  • 1 ½ pounds ground chuck (80/20 for juiciest burgers)
  • ½ cup crushed crackers or Panko breadcrumbs
  • 1 egg
  • 2 tbsp Worcestershire sauce
  • ¼ cup milk
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tbsp Dijon mustard
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper
  • ½ tsp ground cumin
  • 1 tsp soy sauce
  • ½ tsp brown sugar

Instructions

  1. In a large bowl, mix ground beef, crushed crackers, egg, Worcestershire sauce, milk, and seasonings until combined. Do not overmix.
  2. Divide mixture into 6 thick patties or 12 thin patties. Press a small indentation in the center of each.
  3. Preheat grill to medium-high heat (375-400°F) or heat a cast-iron skillet over medium-high heat.
  4. Cook patties for 3-4 minutes per side for thick burgers, or 2 minutes per side for thin burgers. Flip only once.
  5. Add cheese in the last 1-2 minutes if making cheeseburgers.
  6. Serve on toasted buns with favorite toppings.

Notes

For extra juicy burgers, use 80/20 beef and avoid overmixing. Chilling patties before cooking helps retain their shape.
