Bloody Berry Cheesecake

A visually stunning cheesecake topped with a sweet and slightly tart berry sauce, perfect for special occasions or a sweet indulgence.

  • 1 1/2 cups graham cracker crumbs or chocolate cookie crumbs
  • 1/4 cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • 2 cups mixed berries (fresh or frozen)
  • 1/2 cup sugar (for the sauce)
  • 1 tbsp lemon juice

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. In a bowl, combine the graham cracker crumbs and melted butter. Mix well and press into the bottom of the pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
  4. Add the eggs, vanilla extract, and sour cream to the cream cheese mixture. Mix until all ingredients are well combined.
  5. Pour the cheesecake batter over the crust and smooth the top with a spatula.
  6. Bake in the preheated oven for 45-50 minutes until the edges are set, and the center is slightly jiggly.
  7. While the cheesecake cools, make the berry sauce. In a medium saucepan, combine the mixed berries, sugar, and lemon juice over medium heat. Simmer for about 10 minutes, until the berries break down and the mixture thickens slightly.
  8. Strain the sauce to remove seeds and chunks, then let it cool.
  9. Pour the cooled berry sauce over the cheesecake before serving.
  10. Slice the cheesecake, serve, and enjoy!

Notes

Use room temperature ingredients for the best texture. Check for doneness by ensuring the edges are set and the center slightly jiggly.
