Blueberry Cottage Cheese Breakfast Bake

  • 1/2 cup rolled oats
  • 1/2 cup fresh blueberries
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the cottage cheese, rolled oats, blueberries, eggs, honey or maple syrup, cinnamon, and vanilla extract in a mixing bowl. Mix well until all ingredients are thoroughly combined.
  3. Pour the mixture into a greased baking dish, spreading it evenly.
  4. Bake in the preheated oven for 30-35 minutes or until the top is golden and set.
