Blueberry Fluffy Cottage Cheese Cloud Bread

A delightful and healthy alternative to traditional bread, featuring light and fluffy cloud-like buns filled with blueberries.

  • ½ cup cottage cheese (full-fat recommended)
  • 2 large eggs, separated
  • ½ teaspoon vanilla extract (optional)
  • 1 pinch salt
  • ⅓ cup blueberries, patted dry
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate the eggs into two bowls, keeping whites and yolks separate.
  3. Blend the cottage cheese until smooth. Add the egg yolks, vanilla extract, and salt, mixing well.
  4. In a clean bowl, whip the egg whites until stiff peaks form.
  5. Gently fold the whipped egg whites into the cottage cheese mixture.
  6. Carefully fold in the blueberries and lemon zest if using.
  7. Spoon the batter into round mounds on the baking sheet, spacing them apart.
  8. Bake for 25–30 minutes or until lightly golden, then cool slightly before serving.

Notes

These cloud breads can be served plain or with almond butter or Greek yogurt. Store in an airtight container for up to three days or freeze for up to three months.
