  • 4 cups fresh blueberries
  • 1 cup water
  • ½ cup sugar or honey
  • Juice of 1 lemon
  • 46 sprigs of culinary-grade lavender
  • For One Drink:
  • Ice (crushed or cubed)
  • ¼ cup blueberry lavender syrup (chilled)
  • 1 lime wedge
  • Sparkling water or club soda (chilled)
  • Optional garnish: lime wheels or fresh blueberries

Instructions

  1. Make the Syrup: In a saucepan, combine blueberries, water, and sugar. Mash the berries, add lemon juice and lavender sprigs, and bring to a boil. Simmer for 30 minutes, then strain and cool.
  2. Prepare the Drink: Fill a tall glass with ice. Pour in ¼ cup of blueberry lavender syrup and squeeze in the juice from a lime wedge.
  3. Top slowly with sparkling water or club soda.
  4. Garnish with fresh blueberries, lime wheel, or a lavender sprig. Serve immediately.

Notes

The syrup can be made ahead and stored in the fridge for up to a week. Try using the syrup in lemonade, over pancakes, or with vanilla ice cream for added versatility.
