Brie & Cranberry Rotolo with Rosemary Honey Drizzle

A delicious and impressive dish combining creamy brie cheese, tart cranberries, and crunchy pistachios, all wrapped in crispy filo dough and drizzled with rosemary honey.

Ingredients

  • 200g brie, rind removed, torn into pieces
  • 1/2 cup fresh cranberry compote or whole berry cranberry sauce
  • 1/3 cup shelled pistachios, chopped
  • 6 sheets filo dough
  • 3 tbsp melted butter or olive oil (for brushing)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. On a clean surface, lay out one sheet of filo dough and brush it lightly with melted butter or olive oil.
  3. Layer another sheet of filo on top and repeat the brushing.
  4. In the center of the layered filo, spread the brie pieces, cranberry compote, and pistachios.
  5. Carefully roll the filo over the filling to create a cylinder shape.
  6. Brush the outside of the roll with more melted butter.
  7. Place the roll on a baking sheet and bake for about 20-25 minutes, or until golden brown and crispy.
  8. Allow to cool slightly before slicing.
  9. Drizzle with rosemary honey before serving.

Notes

Serve warm for the best experience, and it can be paired with white wine or a refreshingly simple salad.
