Brown Sugar Acorn Squash

A delightful dish showcasing the sweet and nutty flavors of acorn squash, roasted to tenderness with caramelized brown sugar.

Ingredients

  • 2 acorn squash
  • 1/4 cup brown sugar
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the acorn squash in half and scoop out the seeds.
  3. In a small bowl, mix together the brown sugar, melted butter, salt, pepper, and cinnamon if using.
  4. Brush the inside of the squash halves with the brown sugar mixture.
  5. Place the squash halves cut-side up on a baking sheet.
  6. Roast in the oven for about 25-30 minutes, or until the squash is tender and caramelized.
  7. Serve warm as a side dish.
