Brown Sugar Pop Tart Cookies

Delightful cookies that resemble pop tarts filled with sweet brown sugar and cinnamon, topped with a sweet glaze.

  • 1 cup powdered sugar (for glaze)
  • 1/2 teaspoon ground cinnamon (for glaze)
  • 2 tablespoons unsalted butter, melted (for glaze)
  • 23 tablespoons milk (for glaze)

Instructions

  1. In a large bowl, beat together softened butter, granulated sugar, and brown sugar until light and fluffy (2-3 minutes).
  2. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  3. In a separate bowl, whisk cake flour, cornstarch, baking soda, baking powder, and salt. Gradually mix into the wet ingredients. Cover and refrigerate for 1 hour.
  4. In a small bowl, mix softened butter, brown sugar, cinnamon, and cake flour to form the filling.
  5. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Scoop 2 tablespoons of dough, flatten slightly, and place a small amount of filling in the center. Cover with another flattened dough piece and seal the edges.
  7. Arrange cookies on the baking sheet, spacing them apart. Bake for 10-12 minutes until edges are set and golden. Let cool for 5 minutes, then transfer to a wire rack.
  8. For the glaze, whisk powdered sugar, cinnamon, melted butter, and milk until smooth. Drizzle over cooled cookies and let set.
