Bunny Cake Pops

  • ½ cup unsalted butter (room temperature)
  • ¾ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ cup whipped cream cheese frosting (more if needed)
  • 14 ounces white candy melts
  • Pink sanding sugar
  • Pink and white mini marshmallows
  • Black edible food marker

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare your 8-inch round cake pan with parchment paper.
  2. Beat the room temperature butter for 15 seconds until smooth using a stand mixer. Gradually add the sugar and mix for about 5 minutes until light yellow.
  3. Add the vanilla extract and eggs one at a time, mixing on low speed until fully combined.
  4. Whisk together the all-purpose flour, baking powder, and salt in a medium bowl.
  5. Slowly add the dry mixture to the wet mixture until just incorporated.
  6. Transfer the batter into the prepared cake pan and spread evenly.
  7. Bake for about 25 minutes or until a cake tester comes out clean.
  8. Cool the cake for about 40 minutes before crumbling.
  9. Crumble the cooled cake in a large bowl until fine crumbs are achieved.
  10. Add whipped cream cheese frosting to the crumbs and mix until it holds together.
  11. Portion out the mixture using a medium cookie scoop and roll into round balls.
  12. Shape small sausage shapes for the bunny ears and attach them to the cake pops.
  13. Chill the cake pops in the freezer for about 15 minutes.
  14. Melt the white candy melts in a microwave-safe container in 20-second increments, stirring until smooth.
  15. Insert a lollipop stick into each bunny after dipping it into the warm chocolate.
  16. Dip the entire pop into the melted chocolate and allow excess to drip back.
  17. Set the stick into a foam block to let the chocolate set.
  18. Decorate with lines of melted chocolate on ears, dust with pink sanding sugar, and add details like eyes and a nose.

Notes

Bunny Cake Pops can be stored in an airtight container in the refrigerator for up to a week or frozen for up to three months.
