Butterfly Pea Flower Lemonade

A delightful and visually stunning drink made with butterfly pea flowers and lemon juice, transforming from blue to purple.

Ingredients

  • 810 dried butterfly pea flowers
  • ½ cup light colored honey (or more to taste)
  • 1 cup freshly squeezed lemon juice
  • 5 cups filtered water (can use 1 cup of filtered water and 4 cups sparkling water if desired)
  • Ice cubes
  • Additional lemon slices and/or butterfly pea flowers for garnish (optional)

Instructions

  1. Boil 2 cups of water in a medium saucepan. Add butterfly pea flowers and let simmer for 5 minutes until water turns deep blue. Remove from heat and strain, discarding the flowers.
  2. Add honey to the warm tea, stir until dissolved, then mix in lemon juice and remaining cold water.
  3. Refrigerate for at least 1 hour. Serve over ice, garnishing with lemon slices or butterfly pea flowers if desired.
  4. For a smaller batch, use ½ cup of water and 1-2 dried flowers, adjusting honey and lemon juice as needed.
  5. For sparkling lemonade, combine the tea with honey and lemon juice, then gently mix in 4 cups of sparkling water before serving.

Notes

Store in the refrigerator for up to 3 days. Freeze leftovers in ice cube trays for future use.
