Butterfly Pea + Yuzu Lavender Spritz

A refreshing and visually stunning drink that combines butterfly pea tea, yuzu juice, and lavender honey syrup, perfect for warm days and gatherings.

Ingredients

  • 1/4 cup strong butterfly-pea tea (chilled, deep blue)
  • 1 Tbsp lavender honey syrup
  • 2 Tbsp yuzu juice (or 1:1 lemon-lime juice)
  • 1/2 cup plain sparkling water
  • Crushed ice
  • Tiny edible glitter
  • Lavender bud for garnish

Instructions

  1. Fill your coupe glass with crushed ice, to the top for a refreshing chill.
  2. Pour in the chilled butterfly pea tea until the glass is about half full.
  3. Add the lavender honey syrup to the tea.
  4. Slowly drizzle the yuzu juice over the top, watching the color change from blue to violet.
  5. Finish with the plain sparkling water for fizz, adding more ice if necessary.
  6. Sprinkle edible glitter on top and garnish with a lavender bud before serving.

Notes

This drink is best enjoyed fresh. Store leftover butterfly pea tea in the fridge for up to three days, and keep the lavender honey syrup in a sealed jar for about a month.
