Cajun Chicken Pasta

A delightful dish combining juicy chicken, colorful bell peppers, and creamy sauce mixed with pasta, bursting with Cajun spices.

Ingredients

  • 8 oz pasta (fettuccine or penne)
  • 2 chicken breasts, diced
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup bell peppers, sliced
  • 1/2 cup onion, diced
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta according to the package instructions. Once al dente, drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken, sprinkle with Cajun seasoning, and cook until browned and cooked through.
  3. Add sliced bell peppers and diced onion to the skillet. Sauté until softened, about 3-4 minutes.
  4. Pour in chicken broth and bring to a simmer. Stir in heavy cream and Parmesan cheese to create a creamy sauce.
  5. Allow the sauce to thicken slightly, then add the cooked pasta, mixing until well combined.
  6. Season with salt and pepper to taste. Garnish with fresh parsley before serving.

Notes

Serve hot, and pair with garlic bread or a simple salad. Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
