Cannoli Cookies

Delicious and easy-to-make cookies that capture the flavors of traditional Italian cannoli in a bite-sized treat.

  • 1/2 cup unsalted butter, softened
  • 1 cup ricotta cheese
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Mix in the ricotta cheese, egg, and vanilla extract until well combined.
  4. In another bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry mixture to the wet mixture. Stir until just combined; do not overmix.
  6. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper, leaving some space between each cookie.
  7. Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Serve with powdered sugar, ice cream, or whipped cream for added delight.
