Caramelized Butternut Squash with Feta, Walnuts, and Cranberry-Honey Glaze

A delicious blend of sweet and savory flavors featuring caramelized butternut squash, creamy feta cheese, crunchy walnuts, and a sweet cranberry-honey glaze.

  • 1 medium butternut squash, peeled and cubed
  • 2 tbsp olive oil
  • 1 tbsp maple syrup or honey
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup walnuts, chopped
  • 1/4 cup dried cranberries
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the cubed butternut squash with olive oil, maple syrup or honey, salt, and pepper until coated.
  3. Spread the squash on a baking sheet and roast for 25-30 minutes until tender and caramelized.
  4. In the last 5 minutes of roasting, sprinkle feta cheese and walnuts over the squash.
  5. Remove from the oven and drizzle with cranberry-honey glaze before serving.

Notes

Serve warm as a side dish or main meal. Pairs well with roasted meats or can be enjoyed alone.
