Carnitas Street Corn Sliders

Carnitas Street Corn Sliders combine rich flavors of carnitas with bright, delicious street corn, making them perfect for gatherings and easy weeknight dinners.

  • 2 tablespoons extra virgin olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cups corn kernels (fresh or frozen, thawed)
  • 1 teaspoon chili powder
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 teaspoon garlic, minced
  • 3 ounces cream cheese, softened
  • 2 tablespoons sour cream
  • 1 package (12-count) dinner rolls, halved lengthwise
  • 2 cups carnitas, prepared warm
  • 1 cup (113 g) Monterey Jack cheese, shredded
  • ⅓ cup cotija cheese, crumbled (optional)
  • ¼ cup fresh cilantro, chopped
  • ¼ cup (½ stick / 57 g) unsalted butter, melted
  • 1 ½ teaspoons garlic, minced
  • 1 teaspoon fresh parsley, finely chopped
  • ¼ teaspoon kosher salt

Instructions

  1. Preheat your oven to 350°F (175°C). Spray a 9×13-inch baking dish with nonstick cooking spray and set aside.
  2. Heat a large skillet over medium heat and add the olive oil. Once hot, add the diced onion and cook for 4–5 minutes until softened.
  3. Stir in the corn, chili powder, cayenne pepper, kosher salt, and black pepper. Cook for 5–6 minutes until the corn is lightly charred.
  4. Add the minced garlic and cook for 1 more minute.
  5. Reduce heat to low. Stir in softened cream cheese and sour cream until melted and combined, then remove from heat.
  6. Place the bottom halves of the dinner rolls in the prepared baking dish. Spread the warm carnitas evenly over the rolls.
  7. Spoon the corn mixture over the carnitas, followed by sprinkling the Monterey Jack cheese. Add cotija cheese and cilantro if using.
  8. Top with the other halves of the dinner rolls.
  9. In a small bowl, combine melted butter, minced garlic, chopped parsley, and kosher salt. Brush over the top of the dinner rolls.
  10. Bake for 20–25 minutes until the cheese is melted and tops are golden brown. Let cool for a few minutes before serving.

Notes

These sliders are best served warm. Pair with salsa, guacamole, or a fresh side salad.
