  • 12 oz White or Vanilla Candy Melts
  • 4 oz Orange Candy Melts

Instructions

  1. Place the dry carrot cake mix in a microwave-safe bowl and heat in 30-second intervals, stirring each time, for a total of 1 minute to heat-treat the mix.
  2. Let the mix cool completely before adding it to the cream cheese.
  3. Using a hand mixer, beat the cream cheese until smooth and creamy.
  4. Add the heat-treated carrot cake mix and mix until fully combined.
  5. Cover the mixture and chill in the refrigerator for at least 2 hours.
  6. Line a baking sheet with parchment paper and use a cookie scoop to portion the dough, rolling it into balls.
  7. Melt the white candy melts in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  8. Dip each cheesecake ball into the melted candy and place on a parchment-lined baking sheet to harden.
  9. Melt the orange candy melts and drizzle over the coated cheesecake bites using a piping bag or ziplock bag.
  10. Chill in the refrigerator until firm before serving.
