Carrot Cake Oatmeal

A delightful oatmeal dish that combines the sweet and spicy flavors of carrot cake for a nutritious and comforting breakfast.

  • 1 cup milk or water
  • 1/4 cup shredded carrot
  • 1 tbsp brown sugar
  • 1/2 tsp cinnamon
  • 1 tbsp chopped walnuts

Instructions

  1. Combine oats, milk or water, shredded carrot, brown sugar, and cinnamon in a saucepan. Mix everything well.
  2. Cook over medium heat until thickened, stirring occasionally, for about 5-7 minutes.
  3. Top with chopped walnuts and a dollop of cream cheese frosting or Greek yogurt mixed with a little sugar.

Notes

Serve warm with additional toppings like fresh fruit or a drizzle of honey. Leftovers can be stored in the fridge for 3-5 days or frozen for up to 2 months.
