Carrot Cake Syrup

A delicious syrup that captures the unique flavors of carrot cake, perfect for coffee and desserts.

  • 1 ¼ cups water
  • 3 medium carrots, peeled and chopped
  • ¾ cup brown sugar, packed
  • ½ cup chopped pecans
  • ¼ cup granulated sugar
  • 3 cinnamon sticks
  • ⅛ tsp nutmeg
  • 1 tsp vanilla extract
  • ¼ tsp maple extract

Instructions

  1. Gather all ingredients and place them on the counter.
  2. In a medium saucepan, add the water, chopped carrots, brown sugar, chopped pecans, granulated sugar, cinnamon sticks, and nutmeg.
  3. Stir the mixture over medium heat to dissolve the sugars and mix flavors.
  4. Bring to a simmer, indicated by small bubbles forming around the edges.
  5. Let it cook for about 10 minutes, stirring occasionally.
  6. Remove from heat and cool for 15 minutes to thicken the syrup.
  7. Strain the mixture using a fine-mesh strainer to separate the solids from the syrup.
  8. Stir in the vanilla and maple extracts for extra flavor.
  9. Transfer to a mason jar or syrup bottle, seal tightly, and store in the fridge for up to 2 weeks.

Notes

Store in a sealed container in the fridge or freeze in ice cube trays for longer shelf life.
