Chai Spiced Butternut Squash Smoothie

  • 1 frozen ripe banana
  • 1 cup cooked/roasted and frozen butternut squash
  • 1/4 cup plain or vanilla Greek yogurt (or dairy-free yogurt)
  • 1 cup unsweetened almond milk or coconut milk (or milk of choice)
  • 1 tablespoon almond, cashew, or pecan butter
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon cardamom
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon allspice

Instructions

  1. Gather all of your ingredients; ensure the butternut squash is cooked, cooled, and frozen, and the banana is also frozen.
  2. In a large high-powered blender, combine the frozen banana, frozen butternut squash, yogurt, milk, nut butter, vanilla extract, and spices.
  3. Blend on high for 1-2 minutes until smooth.
  4. If too thick, add more milk gradually and blend again to adjust the consistency.
  5. Taste the smoothie; adjust sweetness or spices as desired.

Notes

Serve immediately for the best taste. Can be garnished with a sprinkle of cinnamon or a dollop of yogurt.
