Cheeseburger Twice Baked Potatoes

A delicious twist on traditional baked potatoes combining cheeseburgers and baked potatoes into one hearty meal.

  • 8 baking potatoes, washed
  • 3 tablespoons canola oil
  • 1 tablespoon kosher salt
  • 2 pounds ground beef
  • ½ cup yellow onion, finely diced
  • 1 cup ketchup
  • 2 tablespoons yellow mustard
  • 2 tablespoons hamburger seasoning
  • 1 teaspoon seasoned salt
  • 1 teaspoon garlic powder
  • ½ cup heavy whipping cream
  • ¼ cup unsalted butter
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 cup sharp cheddar cheese, shredded, divided
  • ½ cup dill pickles, diced for garnish
  • Tomatoes, diced for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Poke holes in the washing potatoes with a fork, rub with canola oil and sprinkle with kosher salt. Bake on the oven rack for 45-60 minutes until tender.
  2. In a skillet, cook ground beef with diced onion until brown (8-10 minutes). Drain grease, add ketchup, mustard, seasoning, and garlic powder; cook for 5 more minutes.
  3. Cut baked potatoes in half, scoop out insides into a bowl. Mix with heavy cream, butter, garlic powder, kosher salt, and black pepper until smooth. Fold in half the cheese and beef mixture.
  4. Preheat oven to 375°F (190°C). Fill potato skins with cheeseburger filling, top with remaining cheese and bake for 20-25 minutes until cheese is melted.
