Cheesy Game Day Potato Skins

Delightful appetizer featuring crispy potato skins loaded with melted cheese and crumbled bacon, perfect for gatherings.

Ingredients

  • 4 large russet potatoes, scrubbed and dried
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 2 green onions, thinly sliced (for garnish)
  • 1 cup sour cream (for serving)
  • Optional Toppings: Jalapeños, sliced; Diced tomatoes; Guacamole or salsa; Chopped chives; Hot sauce or ranch dressing

Instructions

  1. Preheat your oven to 400°F (200°C). Pierce the potatoes with a fork, rub with olive oil, and sprinkle with salt and pepper. Bake for 50-60 minutes until tender, then cool for about 10 minutes.
  2. Slice each potato in half lengthwise and scoop out the soft flesh, leaving ¼ inch around the edges.
  3. Brush the skins with olive oil and bake cut side down for 10 minutes, then flip and bake for another 5 minutes.
  4. Fill the skins with cheddar cheese and crumbled bacon, then return to the oven for 5-7 minutes until cheese is melted.
  5. Garnish with sliced green onions and serve warm with sour cream and optional toppings.

Notes

These potato skins can be made ahead of time. Bake and cool the potatoes, then store them in the fridge until you are ready to hollow and fill them.
