Cherry Garcia Loaf Cake

A delightful dessert combining the flavors of cherries and cake into a moist, sweet loaf, inspired by Cherry Garcia ice cream.

  • 3/4 cup sugar
  • 1/2 cup whole milk
  • 1/2 cup oil
  • 1 egg
  • 1 tsp pure vanilla extract
  • 1 tsp almond extract
  • 2 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3 cups maraschino cherries, halved
  • 1 cup powdered sugar
  • 1 tsp almond extract (for glaze)
  • 1 tsp pure vanilla extract (for glaze)
  • 2 tbsp melted unsalted sweet cream butter
  • 1/3 cup maraschino cherry juice

Instructions

  1. Preheat the oven to 350°F.
  2. Spray your loaf pan with Pam spray and set it aside.
  3. In a large mixing bowl, combine sugar, whole milk, oil, egg, vanilla extract, and almond extract. Whisk until mixed well.
  4. In another bowl, mix flour, baking powder, and salt. Slowly add this dry mixture to wet ingredients and stir until just combined.
  5. Gently fold in the chopped maraschino cherries until evenly distributed.
  6. Pour batter into the prepared loaf pan, smoothing the top with a spatula.
  7. Bake for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool for 10-15 minutes before transferring to a wire rack to cool completely.
  9. In a small bowl, mix powdered sugar, almond extract, vanilla extract, melted butter, and cherry juice until smooth for the glaze.
  10. Once the cake has cooled, drizzle the glaze over the top.

Notes

Can be served plain or with vanilla ice cream. Store wrapped in plastic wrap for 2-3 days at room temperature or freeze for up to 3 months.
