Chicken and Broccoli Bowls

A simple, healthy meal combining tender chicken, crisp broccoli, and a savory sauce, ready in under 30 minutes.

  • 2 cups broccoli florets
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • Salt and pepper, to taste
  • Cooked rice or quinoa, for serving
  • Sesame seeds, for garnish
  • Green onions, thinly sliced, for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the chicken pieces in an even layer, season with salt and pepper, and cook for 5–7 minutes, stirring occasionally, until browned and cooked through. Transfer the chicken to a plate and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 30 seconds, or until fragrant.
  4. Add the broccoli florets and stir-fry for 3–4 minutes, until bright green and tender-crisp. Add a splash of water and cover for 1–2 minutes if you prefer softer broccoli.
  5. Return the cooked chicken and any juices to the skillet with the broccoli.
  6. In a small bowl, whisk together the soy sauce, honey, sesame oil, and cornstarch-water mixture until smooth.
  7. Pour the sauce over the chicken and broccoli, stirring well to coat everything evenly.
  8. Cook for 2–3 minutes, stirring frequently, until the sauce thickens to a glossy consistency.
  9. Taste and adjust seasoning with additional soy sauce or pepper, if desired.
  10. Serve hot over warm cooked rice or quinoa, garnished with sesame seeds and green onions.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently with a splash of water to loosen the sauce.
