Cilantro Lime Rice

A flavorful cilantro lime rice recipe inspired by Chipotle’s iconic side dish.

Ingredients

  • 2 cups long-grain white rice
  • 1/4 cup fresh cilantro, chopped
  • 2 limes, juiced
  • 1 teaspoon salt
  • 4 cups water

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a pot, combine the rice and water. Bring to a boil.
  3. Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.
  4. Remove from heat and let it sit covered for 5 minutes.
  5. Fluff rice with a fork and stir in cilantro, lime juice, and salt.

Notes

For a different flavor profile, consider using brown rice or trying cauliflower rice for a low-carb alternative.
