Chorizo Jam

A savory and sweet blend of chorizo, onions, and spices, perfect for spreading on bread or serving as a condiment.

Ingredients

  • 500g cooking chorizo, diced
  • 1 large white onion, finely sliced
  • 2 garlic cloves, crushed
  • 85g light muscovado sugar
  • 3 tbsp Sherry or red wine vinegar
  • 2 tbsp maple syrup
  • 1 shot of espresso coffee or 100ml strong black coffee

Instructions

  1. Heat a large saucepan over medium heat and add the diced chorizo. Fry for about 5 minutes until golden and crispy.
  2. Remove the chorizo with a slotted spoon, leaving the oil in the pan.
  3. Reduce heat to low and cook the sliced onion in the chorizo oil for 15-20 minutes until soft and browned.
  4. Add the crushed garlic and cook for 1 minute until fragrant.
  5. Stir in the muscovado sugar, vinegar, maple syrup, and espresso/coffee.
  6. Return the chorizo to the pan and mix well; cook on low for 35-40 minutes until thick and syrupy.
  7. Cool slightly, then pulse in a food processor until chopped but still textured.
  8. Cool completely and pack into sterilized jam jars; seal properly.

Notes

Chorizo jam keeps well in the refrigerator for up to one month. It can also be frozen for up to six months.
