Christmas Ricotta Chia Pudding

A delightful and festive pudding combining creamy ricotta, nutty chia seeds, and warm spices, topped with vibrant pomegranate arils, pistachios, and cranberries.

  • 1 and 1/2 cup milk of choice (almond milk preferred)
  • 1/2 cup ricotta cheese
  • 1/4 cup chia seeds
  • 2 Tbsp honey or maple syrup (adjust to taste)
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/2 cup pomegranate arils
  • 1/4 cup chopped pistachios or walnuts
  • 1/4 cup dried cranberries
  • 1 Tbsp honey (optional for drizzling)
  • 1 pinch ground cinnamon (for garnish)

Instructions

  1. In a medium mixing bowl, whisk together the milk, ricotta cheese, chia seeds, honey, vanilla extract, and cinnamon until well combined.
  2. Cover and refrigerate for at least 4 hours or overnight, stirring once after the first 30 minutes.
  3. Once thickened, stir the pudding and divide it evenly between serving glasses.
  4. Top each serving with pomegranate arils, chopped pistachios, and dried cranberries. Drizzle with honey if desired and sprinkle with ground cinnamon before serving.

Notes

For best texture, add toppings just before serving. This pudding can be made a day in advance.
