Cilantro Lime Roasted Chicken with Creamy Mashed Potatoes and Pan Gravy

  • 1 whole chicken
  • 1/4 cup fresh cilantro, chopped
  • 2 limes, juiced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and chopped
  • 1/2 cup milk
  • 1/4 cup butter
  • 1 cup chicken broth
  • 2 tablespoons flour

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix cilantro, lime juice, garlic, olive oil, salt, and pepper to create a marinade.
  3. Rub the marinade all over the whole chicken in a roasting pan.
  4. Roast the chicken for about 1.5 hours or until the internal temperature reaches 165°F (75°C).
  5. While the chicken roasts, boil the chopped potatoes in salted water until tender (about 15-20 minutes), then mash with milk and butter.
  6. In a saucepan, whisk together chicken broth and flour, cooking over medium heat until thickened.
  7. Let the roasted chicken rest before serving with mashed potatoes and gravy.

Notes

For added zest, serve with lime wedges and extra cilantro for garnish.
