Cinnamon Roll Muffins

Delightful muffins that combine the comforting flavors of cinnamon rolls with the ease of muffins, perfect for breakfast or a snack.

  • 2 cups (250g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg (optional)
  • 1 large egg, at room temperature
  • 1 cup (240ml) milk (whole milk or 2% recommended)
  • 1/4 cup (57g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1/2 cup (100g) packed light brown sugar
  • 1 ½ tablespoons ground cinnamon
  • 3 tablespoons (43g) unsalted butter, melted
  • 4 ounces (113g) cream cheese, softened to room temperature
  • 1 cup (120g) powdered sugar, sifted
  • 12 tablespoons milk or cream, as needed for consistency
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a 12-cup muffin tin by greasing or lining it with muffin liners.
  2. In a small bowl, mix together the brown sugar, ground cinnamon, and melted butter. Set aside.
  3. In a larger bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and nutmeg.
  4. In another bowl, whisk the egg, milk, melted butter, and vanilla extract until well combined.
  5. Gently combine the wet and dry ingredients, mixing until just blended.
  6. Layer spoonfuls of batter and cinnamon filling into each muffin cup, swirling lightly with a knife.
  7. Bake for 18-22 minutes, until golden brown and a toothpick inserted in the center comes out clean.
  8. Cool the muffins completely on a wire rack.
  9. In a separate bowl, beat together the cream cheese, powdered sugar, vanilla extract, and milk until smooth.
  10. Drizzle the glaze over the cooled muffins and allow to set before serving.

Notes

For a healthier version, consider substituting some ingredients to lower calories or increase fiber content.
