Classic Vanilla Slice

A beloved dessert featuring layers of crispy puff pastry filled with thick, creamy vanilla-infused custard.

  • 2 sheets butter puff pastry, frozen
  • 110 g caster sugar
  • 50 g corn starch
  • 8 egg yolks, room temperature
  • 750 g whole milk, warmed
  • 14 g vanilla bean paste
  • 125 g unsalted butter, chilled and cubed
  • 50 g powdered sugar to dust

Instructions

  1. Preheat a fan-forced oven to 180°C (355°F) or 200°C (390°F) for no fan. Line two baking trays with baking paper.
  2. Thaw the frozen butter puff pastry on the trays, prick with a fork, and cover with another baking tray.
  3. Bake for 40 minutes (50 minutes without a fan) until golden and crispy. Cool completely.
  4. Cut the baked pastry to fit an 8-inch square baking tin.
  5. Combine sugar and corn starch in a bowl, whisk in egg yolks.
  6. Heat milk in a pot on low until bubbles form, then combine with the egg mixture gradually.
  7. Return to the pot, cook over medium heat until thickened, then stir in vanilla bean paste.
  8. Slowly add cold butter, mixing until melted.
  9. Line the baking tray and place the first pastry sheet at the bottom, add custard, smooth it out, then add the second pastry sheet.
  10. Cover and refrigerate for at least 5 hours.
  11. Score and cut the chilled vanilla slice with a serrated knife, dust with powdered sugar, and serve.

Notes

For a healthier version, swap caster sugar with natural sweeteners and use low-fat milk or almond milk. Serve with fresh fruit or Greek yogurt.
