Coconut Clementine Pomegranate Mojito Mocktail

A refreshing and vibrant mocktail that combines clementine, pomegranate, mint, and coconut for a tropical twist.

  • 10 to 12 fresh mint leaves, plus extra for garnish
  • 2 teaspoons sugar or 1 to 2 teaspoons simple syrup, to taste
  • 1 large clementine, juiced (about 1/4 cup) or 2 small clementines
  • 1/2 cup chilled clementine juice (for two drinks)
  • 1/2 cup chilled pomegranate juice
  • 1 cup chilled coconut water, or 3/4 cup light coconut milk for a creamy style
  • 2 tablespoons fresh lime juice
  • 1 to 1 1/2 cups ice, crushed or cubed
  • 1 cup club soda or sparkling water, divided
  • Optional: pomegranate arils, clementine wheels, coconut flakes for garnish

Instructions

  1. Add mint leaves and sugar or simple syrup to a sturdy glass or shaker. Gently press with a muddler or the back of a spoon to release oils.
  2. Pour in clementine juice, pomegranate juice, coconut water, and lime juice. Stir or shake briefly until the sugar dissolves.
  3. Fill two serving glasses with ice. Strain the minty juice mix evenly between the glasses.
  4. Top each glass with club soda for fizz. Give it a gentle swirl.
  5. Taste and adjust. Add a touch more syrup if you want it sweeter or a squeeze of lime if you want more tang.
  6. Garnish with a mint sprig, clementine wheel, and a few pomegranate arils. Sip immediately.

Notes

Chill all ingredients before preparation for the best taste. Adjust sweetness and tartness as desired.
