Coconut Lime Fish Soup

A delightful soup that combines fresh fish with rich coconut milk and zesty lime, perfect for a light yet satisfying meal.

  • 1 lb white fish fillets (cod, halibut, or tilapia)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp ginger, minced
  • 1 tbsp red curry paste
  • 1 can (14 oz) coconut milk
  • 2 cups chicken or vegetable broth
  • 1 tbsp fish sauce
  • Juice of 1 lime
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, minced garlic, and ginger; sauté until the onion becomes translucent, about 5 minutes.
  3. Stir in the red curry paste and cook for an additional minute.
  4. Pour in the coconut milk and chicken or vegetable broth; stir well and bring to a gentle simmer.
  5. Add the fish fillets; cook until opaque and flaked with a fork, about 5-7 minutes.
  6. Stir in the fish sauce and lime juice, and season with salt and pepper to taste.
  7. Serve hot, garnished with fresh cilantro and lime wedges.

Notes

For best flavor, use fresh fish and feel free to customize with additional vegetables. Consider ladling into bowls with crusty bread or rice for a complete meal.
