A fun and unique no-bake treat packed with protein from cottage cheese and customizable with various mix-ins.

  • 1 cup Cottage Cheese (Preferably low-fat or fat-free)
  • 1/2 cup Almond Flour
  • 1/4 cup Honey or Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Oat Flour
  • 1 pinch Salt

Instructions

  1. Ensure the cottage cheese is smooth and creamy; blend for a silkier texture if desired.
  2. In a mixing bowl, combine cottage cheese, almond flour, honey or maple syrup, vanilla extract, oat flour, and salt. Mix until a dough-like texture forms.
  3. Shape the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
  4. Chill the dough bites for at least an hour to set before serving.

Notes

These cookie dough bites are best enjoyed chilled. They can be stored in an airtight container in the refrigerator for 3-5 days or frozen for up to three months.
