Cowboy BBQ Bacon Cheddar Chicken

A hearty dish featuring smoky bacon, tangy barbecue sauce, and melted cheddar cheese, perfect for family dinners or gatherings.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 slices bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup barbecue sauce
  • 1/4 cup green onions, chopped
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat a large skillet over medium heat and cook the bacon until crispy, about 5-7 minutes.
  3. Remove the bacon and place it on a plate to drain.
  4. Crumble the cooled bacon into small pieces and set it aside.
  5. Rub both sides of each chicken breast with olive oil.
  6. Sprinkle garlic powder, onion powder, smoked paprika, salt, and black pepper on both sides of the chicken.
  7. Heat a large oven-safe skillet on medium-high heat, then add seasoned chicken breasts and cook for 4-5 minutes per side until golden brown.
  8. Chop the green onions and prepare the barbecue sauce while the chicken cooks.
  9. Pour barbecue sauce over the seared chicken and sprinkle shredded cheddar cheese on top.
  10. Crumble the cooked bacon over the cheese.
  11. Transfer the skillet to the preheated oven and bake for 10-12 minutes until the chicken is cooked and the cheese is melted.
  12. Remove from the oven and sprinkle chopped green onions on top. Add red pepper flakes if desired.
  13. Let rest for a few minutes before serving.

Notes

Pairs well with sides like coleslaw, corn on the cob, and mashed potatoes. Customize with additional toppings or spices as desired.
