Perfect Rosemary Syrup

A fragrant and versatile syrup made from fresh rosemary, perfect for cocktails, mocktails, and other beverages.

Ingredients

  • 1 cup water
  • 1 cup granulated sugar
  • 3 to 4 fresh rosemary sprigs (about 5 inches each)
  • Optional: 1 strip of lemon peel (no white pith)

Instructions

  1. Combine water and sugar in a small saucepan. Set over medium heat and stir until the sugar fully dissolves.
  2. Add the rosemary sprigs and optional lemon peel. Bring to a gentle simmer.
  3. Simmer for 3 to 4 minutes, then turn off the heat. Cover and let it steep for 15 to 20 minutes.
  4. Taste and if a deeper rosemary flavor is desired, steep for an additional 5 minutes. Remove rosemary.
  5. Strain into a clean glass jar or bottle. Cool completely, then refrigerate.

Notes

Best when used fresh, can last up to 2 weeks in the fridge. For longer storage, freeze in ice cube trays.
