Cranberry Balsamic Ribeye Roast

A delicious ribeye roast featuring a sweet and tangy cranberry balsamic sauce, perfect for special occasions and family gatherings.

  • 1 ribeye roast (about 34 pounds)
  • 1 cup fresh cranberries
  • 1/2 cup balsamic vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh rosemary for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan over medium heat, combine the fresh cranberries, balsamic vinegar, and brown sugar. Cook until the cranberries burst and the sauce thickens, about 10-15 minutes.
  3. Rub the ribeye roast with olive oil, minced garlic, salt, and pepper.
  4. Place the roast in a roasting pan and pour the cranberry balsamic sauce over it.
  5. Roast in the preheated oven for about 1-1.5 hours, or until the internal temperature reaches your desired doneness.
  6. Let the roast rest for 10-15 minutes before slicing.
  7. Garnish with fresh rosemary if desired and serve.

Notes

If you have leftovers, store in the refrigerator for 3-4 days or freeze for up to 3 months. Check internal temperature for desired doneness.
