Cranberry Bread

A delightful cranberry bread featuring zesty orange flavor and the tartness of fresh cranberries, perfect for any occasion.

  • 2 ½ cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 ½ cups granulated sugar
  • 1 cup butter (salted, softened)
  • 3 teaspoons orange zest
  • 3 large eggs (room temperature)
  • ½ teaspoon vanilla extract
  • ¾ cup sour cream
  • 2 tablespoons orange juice
  • 2 ½ cups fresh cranberries
  • 1 ½ cups powdered sugar
  • 2 tablespoons orange juice (for glaze)
  • 2 teaspoons orange zest (plus more for garnish)
  • 12 teaspoons orange zest (for mixing into the bread)
  • ¼ cup dried cranberries (chopped)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the flour, baking powder, and salt.
  3. In a separate large bowl, beat the softened butter and granulated sugar together until light and fluffy.
  4. Add the orange zest to the butter and sugar mixture and mix well.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Add the vanilla extract, sour cream, and orange juice, mixing until smooth.
  7. Gradually add the dry mixture to the wet mixture and stir until just combined.
  8. Fold in the fresh cranberries and chopped dried cranberries.
  9. Pour the batter into a greased loaf pan and spread it evenly.
  10. Bake in the preheated oven for about 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  11. Let it cool in the pan for about 10 minutes before transferring to a wire rack.
  12. In a small bowl, mix the powdered sugar, 2 tablespoons of orange juice, and 2 teaspoons of orange zest until smooth for the glaze.
  13. Drizzle the glaze over the cooled cranberry bread and sprinkle some extra orange zest on top if desired.

Notes

Store in an airtight container at room temperature for up to three days or freeze for up to two months. Thaw overnight in the fridge before slicing.
