Cranberry Brie Pinwheels

Delightful pinwheels combining tart cranberries and creamy brie cheese, perfect for holiday gatherings.

  • 12 ounces fresh cranberries, rinsed and picked through
  • 1 cup granulated sugar
  • 1 cup water
  • 1 sprig rosemary or 1 quarter of an orange peel
  • 17.3 ounces puff pastry, thawed (1 package)
  • 8 ounces brie (1 wheel)
  • 1 tablespoon chopped rosemary or orange zest (optional)

Instructions

  1. In a medium saucepan over medium heat, combine cranberries, granulated sugar, water, and either a rosemary sprig or orange peel. Cook until the cranberries break down and thicken to resemble jam, about 20 minutes. Remove the rosemary or peel and let cool.
  2. Preheat your oven to 400°F (200°C). Line two large baking sheets with parchment paper.
  3. Roll out one sheet of puff pastry slightly to remove creases. Spread the cranberry sauce over the pastry, leaving half an inch on one edge. Lay thin slices of brie over the sauce and sprinkle with chopped rosemary or orange zest. Brush the bare edge with water to help seal it. Roll the pastry into a log starting from the edge opposite the bare side. Repeat with the second sheet of puff pastry.
  4. Freeze the logs seam side down for 20-30 minutes until firm enough to slice. Cut each log into 12 even slices and transfer to the baking sheets.
  5. Bake until the pastry is puffed and golden brown on the edges, about 23-25 minutes. Let cool for 5-10 minutes before serving.

Notes

Serve warm or at room temperature. Great for appetizers or snacks during the holiday season.
