Cranberry Brie Puff Pastry Bites

Delicious savory-sweet puff pastry bites filled with creamy brie cheese and tangy cranberry sauce, perfect for any occasion.

  • 6 ounces fresh organic cranberries
  • 1/4 cup plus 1 tablespoon water
  • 1/4 cup sugar
  • Pinch of cinnamon
  • Pinch of orange zest (optional)
  • 2 sheets all-butter puff pastry, thawed
  • 4 ounces brie cheese, cut into small pieces
  • 1/4 cup chopped candied pecans, for garnish
  • Honey, to drizzle
  • 1 tablespoon thyme leaves, for garnish

Instructions

  1. Gather and prep all ingredients, keeping puff pastry cold.
  2. In a small pot, combine cranberries, water, sugar, and cinnamon, bringing to a simmer.
  3. Reduce heat and gently simmer for 6-8 minutes until cranberries pop and sauce thickens.
  4. Prepare two mini muffin tins. Roll out one sheet of puff pastry slightly and cut into 12 squares.
  5. Press each square into a muffin tin to create cups. Place a piece of brie in each. Chill in the fridge for 20 minutes.
  6. Preheat oven to 400°F.
  7. Remove muffin tins from the fridge and bake for about 22 minutes or until the pastry is golden brown.
  8. Allow them to sit for 5 minutes, then place on a serving platter.
  9. Top with cranberry sauce, chopped pecans, drizzle of honey, and thyme leaves.
  10. Serve warm or at room temperature.

Notes

Can be prepped ahead of time. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
