Cranberry Fluff

Cranberry Fluff is a delightful and light dessert combining tart cranberries, sweet pineapple, and marshmallows for a creamy and fluffy treat perfect for gatherings.

  • 1 cup fresh cranberries, rinsed and drained
  • 8 ounces pineapple chunks
  • 2 cups miniature marshmallows
  • 2 cups shredded coconut
  • 8 ounces pineapple tidbits, drained (or crushed pineapple)
  • 1 cup chopped pecans
  • 8 ounces Cool Whip, thawed

Instructions

  1. Pulse the fresh cranberries and pineapple chunks together in a food processor or blender to break down the fruit into small pieces.
  2. Refrigerate the mixture for about 2 hours to allow flavors to mix well.
  3. In a large bowl, combine the chilled cranberry-pineapple mixture with miniature marshmallows, shredded coconut, pineapple tidbits, and chopped pecans.
  4. Gently fold in the thawed Cool Whip into the fruit mixture until well combined without losing fluffiness.
  5. Place the mixture back into the fridge until ready to serve.

Notes

Best served cold; garnish with extra pecans or a sprinkle of coconut if desired. Can be prepared ahead and stored in the fridge.
