Creamy Artichoke and Vegetable Soup

A delightful, creamy soup combining artichokes and fresh vegetables, perfect for any occasion.

Ingredients

  • 1 can artichoke hearts (drained and chopped)
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery, sautéing until softened.
  2. Add garlic and dried thyme; cook for 1 more minute.
  3. Stir in the artichoke hearts and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Use an immersion blender to puree the soup until smooth, or blend in batches.
  5. Stir in heavy cream and season with salt and pepper to taste.
  6. Heat through and serve hot.

Notes

Can be garnished with fresh herbs or red pepper flakes for added flavor.
