Creamy Balsamic Chicken with Roasted Onions and Sun-Dried Tomatoes

A delicious one-pan meal featuring juicy chicken, rich cream, sweet roasted onions, and tangy sun-dried tomatoes.

  • 4 chicken breasts
  • 1 large onion, sliced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat.
  3. Add the sliced onions and cook until soft and caramelized.
  4. Season the chicken breasts with salt and pepper, then add them to the skillet and brown on both sides.
  5. Add sun-dried tomatoes, balsamic vinegar, and heavy cream to the skillet. Stir to combine.
  6. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through.
  7. Garnish with fresh basil before serving.

Notes
