Creamy Chicken Alfredo Soup

A warm and comforting soup that combines the rich flavors of chicken alfredo with hearty ingredients, perfect for chilly days.

  • 3 boneless, skinless chicken breasts, thinly sliced
  • 12 tbsp olive oil or avocado oil
  • 1 tsp garlic powder
  • 1 tbsp Kinder’s Grilled Chicken Seasoning
  • 1 tsp Complete Seasoning
  • ½ tsp smoked paprika
  • 12 tbsp avocado oil (for searing)
  • ½ shallot, diced
  • 34 cloves garlic, minced
  • ½ stick (4 tbsp) unsalted butter
  • ¼ cup all-purpose flour
  • 5 cups chicken broth
  • 3 cups heavy cream
  • 1 block (8 oz) cream cheese, softened
  • ½ lb pasta (any shape)
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper
  • 1 tsp fresh oregano, chopped
  • 1 tbsp fresh parsley, chopped
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • Extra parsley, for garnish

Instructions

  1. Place the sliced chicken in a bowl, drizzle with oil, and sprinkle in spices. Massage until coated.
  2. Heat avocado oil in a large pot over medium-high heat and sear chicken for 4–5 minutes on each side, until golden. Set aside.
  3. Melt butter in the same pot, add shallot and garlic, and sauté for 1–2 minutes.
  4. Add flour and whisk for about a minute until golden and smooth.
  5. Slowly pour in chicken broth while whisking, then stir in heavy cream and cream cheese. Simmer until creamy.
  6. Add spices and herbs, let simmer for 5–7 minutes.
  7. Add broken pasta and simmer for 10–12 minutes, until tender.
  8. Return chopped chicken to the pot and stir in cheeses until melted. Adjust seasoning to taste.
  9. Ladle soup into bowls, garnish with parsley, and serve warm.

Notes

Easily adjustable with added vegetables or different meats. Great for meal prep and freezing.
