Creamy Chicken Noodle Soup

  • 1 tablespoon unsalted butter
  • 3/4 cup chopped yellow onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 2 garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 8 cups chicken broth
  • 1 medium potato, diced
  • 2 cups cooked chicken, shredded
  • 1 cup half-and-half
  • 34 cups uncooked wide egg noodles
  • Fresh thyme for garnish

Instructions

  1. Melt butter in large pot over medium heat. Add onion, carrots, celery, and garlic. Cook 5 minutes until softened.
  2. Stir in flour, salt, pepper, thyme, and oregano. Cook 2 minutes.
  3. Add chicken broth and potato. Bring to boil, then simmer partially covered for 25 minutes.
  4. Add chicken, half-and-half, and noodles. Cook 10 minutes until noodles are tender.
  5. Taste and adjust seasonings. Serve hot with fresh thyme garnish.

Notes

Use rotisserie chicken to save time and add flavor. Don’t overcook noodles — they continue to soften in the hot broth.
